WHITE PEACH MOJITO

(FOR INDIVIDUAL SERVING)
 
1 1/2 oz. Spytail Black Ginger Rum  
1 oz. White Peach Puree 
10 Sprigs of Spearmint
5 Limes
1/4 oz. Simple Syrup
1 oz. of East Imperial Superior Soda Water 
 
In a shaking tin place 5 Lime wedges, 1/4 oz. of simple syrup, & mint leaves of choice.  I used spearmint in this tasty mojito.  Muddle the ingredients.  Add ice to 3/4 full and top with 1 1/2 oz. Spytail Black Ginger Rum, 1 oz. White Peach Puree.  Cover with matching shaking tin and shake.  Remove shaking tin and pour into your favorite glass.  Top with 1oz. Superior Soda Water.

SPYTAIL SHANDY

(For Individual Serving)

1 1/2 oz. Spytail Black Ginger Rum
3 1/2 oz.  Kronenbourg 1664
3 oz. Housemade Lemonade –  1/2 squeezed Lemon, Cucumber, Aloe Vera, & Coconut Water
In a shaker over ice combine:  1 1/2 oz. Spytail Black Ginger Rum & your housemade lemonade.  Strain into your favorite pilsner style glass filled with ice.  Top with your favorite beer.  I love making a French Spytail Shandy. Garnish with a lemon & paper bamboo straw for decoration.

THE DUKE

(For Individual Serving)

1 1/2 oz. Spytail Black Ginger Rum
1/2 oz. Bruto Americano
2 oz. Pineapple Juice
1 oz. Mango Juice 
1/2 oz. of Orange Juice
Combine all ingredients in a shaker and shake.  Strain over fresh ice into your favorite tiki glass and garnish with fresh fruit.
Then sit back and sip on this cocktail and escape for a bit.

DON PAPA’S MULE

1 ½ oz. Don Papa Rum

3 ½ oz. East Imperial Ginger Beer

A Slice Of Fresh Local Honeycomb

Lime Pinwheel

In a copper mug over ice pour Don Papa Rum. Top with East Imperial Ginger Beer. To garnish a nice slice of local honey and a lime pinwheel. Excellent to mix in fresh honeycomb.

CAPTAIN NEMO’S EGGNOG

For Batching (Serves 15-20 guests)
1 Bottle (750ml) SPYTAIL BLACK GINGER RUM
4 Cups Almond Milk Unsweetened
3-4 Cups Light Cream
1 Cup Sugar
5 Whole Cloves
1 Stick of Cinnamon
1/2 Teaspoon Ground Nutmeg
10 egg yolks

 

  • Combine Almond Milk, Whole Closes, Cinnamon Stick In a saucepan, heat on low and slowly bring mixture to a boil.  Usually, takes about 5 minutes.
  • In a large bowl, combine egg yolks and sugar.  Whisk together until fluffy.  Slowly, whisk hot milk mixture. Pour mixture into saucepan.  Cook over low-medium heat and do not allow it to boil.  Stir constantly for 3-5 minutes until thickened.  Remove cloves and cinnamon stick.  Let the mixture cool for an hour.
  • Stir in Spytail Black Ginger Rum, cream, 2 teaspoon of Giffard Vanille de Madagascar, & nutmeg.  Refrigerate overnight.  When serving…top with dash of cinnamon.

Combine Spytail Black Ginger Rum in a shaker with Stirring’s Simple Mojito Mix and shake over ice.  Stain in cocktail glass filled with ice and top with Fever Tree Club Soda.  Garnish with lime & fresh mint.

1 1/2 oz. Spytail Black Ginger Rum
2 oz. Freshly Squeezed Blood Orange Juice
1/2 oz. Coconut Puree
2 Dashes of Tobacco Bitters

In a shaker combine all ingredients over ice. Shake and blend ingredients. Strain the liquid over fresh ice in your favorite cocktail glass and garnish with fresh or dried blood orange slice.

(For Individual Serving)

1 1/2 oz. SPYTAIL BLACK GINGER RUM (Aged, blended, infused in the Cognac Region of FRANCE)-Infused with Fresh Ginger & Spices (Cinnamon, Clove, & Vanilla Beans)
Top With Fever Tree Ginger Beer
1/4 oz. freshly squeezed lime juice

Combine all ingredients over ice and stir. Garnish with lime. Delicious on the rocks!

This is a delicious and festive rum based cocktail. Prepare in large batches for your holiday party or simply enjoy by yourself listening to carols and enjoying all the season has to offer!

1.5 oz Papa’s PILAR Blonde Rum
.5 oz Fruit Lab Orange Liquour
.5 oz Tangerine juice or manderine/tangerine puree from The Perfect Puree
Shaved nutmeg
Teaspoon organic honey
Fever-Tree Club Soda
Dried cherries
Dried fig

In a large wine glass, combine over ice rum, puree, honey and nutmeg. Top with Fever-Tree Club Soda. Garnish with dried cherries and dried fig.
